Baia Abuladze is a very young Georgian woman who decided a few years ago to take over the vineyards of her family, which for two generations had been producing only for the sale of grapes. Together with her sister and brother, Baia focuses on quality production, starting with the use of lunar calendars, viticulture with minimal effort and traditional vinification in Qvevri, which are called Tchuri here in Imereti.
This classic dry, amber wine from the Imereti wine region is made from a blend of 20% Tsitska, 60% Tsolikouri and 20% Krakhuna. These three indigenous grapes are macerated on the skins for a month before being spontaneously fermented in traditional Qvevri amphorae.
The wine has an intense and special aromatic profile with delicious notes of persimmon, apricot and citrus. On the palate, it reveals the perfect harmony between these local grape varieties: the elegant and velvety taste of Krakhuna, the freshness of Tsitska and the balanced finish of Tsolikouri. It is a rich and full-bodied wine with a good finish. It goes well with poultry and not with fatty fish. You can also try it with vegetarian Greek cuisine and cream cheese.
