Otskhanuri Sapere has an intense ruby red colour, is firmly structured and tannic with high acidity. The wine has high ageing potential and reaches its peak after 10 to 15 years, but can also be stored for 20 to 30 years.

Expansion:

The wine is fermented on the skins in Qvevri without the addition of yeast and then aged for 9 months before being bottled unfiltered.

Grape variety:

Otskhanuri Sapere is considered one of Georgia's oldest grape varieties and grows mainly in the Imereti wine region of western Georgia. however, its original region is a village "Otskhana" in the Guria wine region. "Otskhana" means "colorful, , sapere" – "dyer." The grape variety has a very intense dark raspberry colour and is therefore also mixed with the other wines to give colour to the others. Otskhanuri Sapere is suitable as a late-ripening and low-yielding grape variety.

Winery:

The winery is known nationally and internationally more under the name Baia’s Wine and is located in the village of Obcha in western Georgia in the Imereti wine region. These are young siblings Baia, Gvantsa and Giorgi Abuladze, who have been bottling wine since 2015 and have since become very well known internationally.
